What happens when your coffee's gone?
Eventually it will be — we buy small lots and roast through them. When one's finished it doesn't come back; it moves to the archive. What replaces it depends entirely on what we find.
We taste a lot of green coffee. Most of it is perfectly good and we pass on it. Every so often something turns up that's genuinely odd — a ferment that shouldn't work, a varietal nobody stocks — and that's the one we buy. Then it's a few weeks of roasting it a dozen different ways, arguing about the results, and dialing it in until it's a bag we'd happily put our name on. That's the one you get.
So a subscription here isn't a standing order for one coffee forever — it's a standing invitation to whatever comes out of the lab next. We'll email you before anything changes and you pick. If you'd rather not think about it, tell us roughly what you like and we'll choose close.
That's the point, not a compromise. It's how you end up drinking something you'd never have picked off a shelf. If you want the identical bag every month forever, we're probably the wrong roaster — and we'd rather say so here than after you've paid.
