The story
Our first decaf, and we weren't going to ship one that tastes like a compromise. This is Ethiopia Guji, Godina — heirloom varietals grown at 1,700–2,100 masl, decaffeinated by Swiss Water, so it's water only, no chemicals, and the cup stays intact. Which is the point: apple, apricot, fruit tea, and a little spice, the kind of Ethiopian coffee you'd reach for with the caffeine still in it. Brew it like one too — pour-over or auto drip, 1:16, about six minutes. Decaf you'd actually choose.
